{"id":111,"date":"2017-10-08T15:00:21","date_gmt":"2017-10-08T15:00:21","guid":{"rendered":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/apple-pie-hubbub-with-cinnamon-streusel-topping\/"},"modified":"2017-10-08T15:00:21","modified_gmt":"2017-10-08T15:00:21","slug":"apple-pie-hubbub-with-cinnamon-streusel-topping","status":"publish","type":"post","link":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/apple-pie-hubbub-with-cinnamon-streusel-topping\/","title":{"rendered":"Apple Pie Hubbub with Cinnamon Streusel Topping"},"content":{"rendered":"<div class=\"image_block\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/sofadog.net\/recipes\/\/\/\/media\/users\/robin\/IMG_5101.JPG\" alt=\"\" title=\"apple pie hubbub\" width=\"400\" height=\"300\" \/><\/div>\n<p>This is adapted from the September &#8217;96 issue of Bon Appetit.  <\/p>\n<p>Crust:<br \/>\n6 oz (1.5 sticks) butter, softened<br \/>\n1.5 oz (6 tbs) powdered sugar<br \/>\n1 tsp vanilla<br \/>\n1\/4 tsp salt<br \/>\n7 1\/4 oz (1.5 c) flour<\/p>\n<p>Filling:<br \/>\n2 lbs baking apples, peeled, cored, cut into .5&#8243; slices<br \/>\n1\/4 c sugar<br \/>\n3 tbs butter, melted<br \/>\n1 tsp cinnamon<\/p>\n<p>Topping:<br \/>\n4.5 oz (1 scant cup) flour<br \/>\n1\/2 c light brown sugar<br \/>\n1 c rolled oats<br \/>\n1\/2 c chopped walnuts<br \/>\n1 tsp cinnamon<br \/>\n5 oz (1 1\/4 sticks) chilled butter, cut into small pieces<\/p>\n<p>For crust:  Preheat oven to 350F.  Combine first four ingredients in large bowl, beat until fluffy.  Add flour, beat just until moist clumps form.  Gather dough into ball; flatten into disk.  Press dough over bottom and up sides of 9&#8243; pie pan.  Freeze until firm, about 10 min.<\/p>\n<p>Bake crust 10 min.  Using rubber spatula, press up sides of crust if beginning to fall.  Bake until crust is pale golden, about 20 min. longer.  Cool completely on a rack.<\/p>\n<p>For filling:  Toss apples with remaining ingredients.  Transfer filling to crust, mounding in center.<\/p>\n<p>For topping:  Mix all but butter in medium bowl.  Using fingertips, rub in butter until moist clumps form.  Sprinkle topping over filling, pressing gently to compact.<\/p>\n<p>Bake until topping is golden and apples are tender, covering crust edges with foil if browning too quickly, about one hour.
