{"id":152,"date":"2017-10-08T15:00:34","date_gmt":"2017-10-08T15:00:34","guid":{"rendered":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/bacon-wrapped-meatloaf\/"},"modified":"2017-10-08T15:00:34","modified_gmt":"2017-10-08T15:00:34","slug":"bacon-wrapped-meatloaf","status":"publish","type":"post","link":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/bacon-wrapped-meatloaf\/","title":{"rendered":"Bacon-wrapped Meatloaf"},"content":{"rendered":"<p>Brown Sugar &#8211; Ketchup Glaze<br \/>\n1\/2  \tcup  ketchup or chili sauce<br \/>\n4  \ttablespoons  brown sugar<br \/>\n4  \ttablespoons  cider vinegar or white vinegar<\/p>\n<p>Meat Loaf<br \/>\n2  \tteaspoons  vegetable oil<br \/>\n1  \tmedium onion , chopped medium<br \/>\n2  \tmedium cloves  garlic , minced<br \/>\n2  \tlarge eggs<br \/>\n1\/2  \tteaspoon  dried thyme<br \/>\n1  \tteaspoon  table salt<br \/>\n1\/2  \tteaspoon  ground black pepper<br \/>\n2  \tteaspoons  Dijon mustard<br \/>\n2  \tteaspoons  Worcestershire sauce<br \/>\n1\/4  \tteaspoon  hot pepper sauce<br \/>\n1\/2  \tcup  whole milk or plain yogurt<br \/>\n1  \tpound  ground beef chuck<br \/>\n1\/2  \tpound  ground pork<br \/>\n1\/2  \tpound  ground veal<br \/>\n2\/3  \tcup  Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1\/3 cups fresh bread crumbs<br \/>\n1\/3  \tcup  minced fresh parsley leaves<br \/>\n6 &#8211; 8  \tounces  bacon , thin sliced (8 to 12 slices, depending on loaf shape)<\/p>\n<p>See Illustrations Below: Forming the Loaf<\/p>\n<p>1. For the glaze: Mix all ingredients in small saucepan; set aside.<br \/>\n2. For the meat loaf: Heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; saut\u00e9 until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients.<br \/>\n3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple tablespoons at a time until mix no longer sticks.)<br \/>\n4. Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf, (see illustration 1, below).<br \/>\n5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly.
