{"id":19,"date":"2017-10-08T14:59:44","date_gmt":"2017-10-08T14:59:44","guid":{"rendered":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/berry-muffins\/"},"modified":"2017-10-08T14:59:44","modified_gmt":"2017-10-08T14:59:44","slug":"berry-muffins","status":"publish","type":"post","link":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/berry-muffins\/","title":{"rendered":"Berry Muffins"},"content":{"rendered":"<p><img decoding=\"async\" src=\"http:\/\/sofadog.net\/recipes\/media\/IMG_7725-1.JPG\" border=\"0\" alt=\"Raspberry Muffins\" \/><\/p>\n<p>The original recipe calls for blackberries, but raspberries work just as well.<\/p>\n<p>4 oz (1 stick, 1\/2 cup) unsalted butter, room temperature<br \/>\n1.25 c sugar (9.5 oz)<br \/>\n2 eggs<br \/>\n10 oz (approx 2 cups) flour<br \/>\n2 tsp baking powder<br \/>\n.5 tsp salt<br \/>\n.5 c milk<br \/>\n2 c fresh or frozen berries (9 oz)<br \/>\nsanding sugar<\/p>\n<p>Preheat oven to 375F<\/p>\n<p>Spray 18 muffin cups with Pam w\/ Flour.<\/p>\n<p>In an electric mixer cream butter &amp; sugar until light.  Add eggs one at a time, beating well after each addition.<\/p>\n<p>Sift flour, baking powder and salt into small bowl.<\/p>\n<p>Mix dry ingredients into butter mixture alternating with milk.  Fold in berries.<\/p>\n<p>Divide batter among prepared cups with a #16 disher.  Sprinkle sugar generously over the tops.
