{"id":25,"date":"2017-10-08T14:59:51","date_gmt":"2017-10-08T14:59:51","guid":{"rendered":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/corn-and-cheddar-chowder\/"},"modified":"2017-10-08T14:59:51","modified_gmt":"2017-10-08T14:59:51","slug":"corn-and-cheddar-chowder","status":"publish","type":"post","link":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/corn-and-cheddar-chowder\/","title":{"rendered":"Corn and Cheddar Chowder"},"content":{"rendered":"<div class=\"image_block\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/sofadog.net\/recipes\/media\/users\/robin\/IMG_1475.JPG\" alt=\"\" title=\"corn and cheddar chowder\" width=\"300\" height=\"225\" \/><\/div>\n<p>From an old <a href=\"http:\/\/groups.google.com\/groups?hl=en&amp;lr=&amp;ie=UTF-8&amp;selm=389F3941.DB13932D%40mindspring.com \">usenet post<\/a>.<\/p>\n<p>4 bacon slices, cut into 1\/4 inch pieces<br \/>\n1 large onion, finely chopped<br \/>\n1 tbs unsalted butter<br \/>\n2 tsp ground cumin<br \/>\n3 tbs all-purpose flour<br \/>\n4 cups chicken broth<br \/>\n1 lg boiling potato, peeled and cut into 1\/4-inch dice<br \/>\n1\/2 cup heavy cream<br \/>\n10-oz package frozen corn kernals<br \/>\n1\/2 lb sharp Cheddar, grated <\/p>\n<p>Cook bacon in 3-quart heavy saucepan over moderate heat, stirring, until<br \/>\ncrisp and transfer with a slotted spoon to paper towels to drain. <\/p>\n<p>Add onion and butter to fat in pan and cook, stirring, until onion is<br \/>\nsoftened. Add cumin and cook, stirring, one minute. Add flour and cook,<br \/>\nstirring, 1 minute. Whisk in broth and bring to a boil, whisking<br \/>\noccaisionally. Add potato and simmer, covered, stirring occaisionally,<br \/>\nuntil just tender, 8 minutes. Stir in cream and corn and return to a<br \/>\nsimmer. Add Cheddar, stirring just until cheese is melted (do not let<br \/>\nboil), and season generously with pepper. <\/p>\n<p>Serve topped with bacon. <\/p>\n<p>(Soup keeps 2 days, covered and chilled). <\/p>\n<p>This is especially good in bread bowls.
