{"id":34,"date":"2017-10-08T14:59:51","date_gmt":"2017-10-08T14:59:51","guid":{"rendered":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/baked-mac-cheese\/"},"modified":"2017-10-08T14:59:51","modified_gmt":"2017-10-08T14:59:51","slug":"baked-mac-cheese","status":"publish","type":"post","link":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/baked-mac-cheese\/","title":{"rendered":"Baked Mac &amp; Cheese"},"content":{"rendered":"<p>From <a href=\"http:\/\/www.foodnetwork.com\/food\/recipes\/recipe\/0,1977,FOOD_9936_18422,00.html\">Good Eats<\/a><\/p>\n<p>1\/2 pound elbow or corkscrew macaroni<br \/>\n3 tablespoons butter<br \/>\n3 tablespoons flour<br \/>\n1 tablespoon powdered mustard<br \/>\n3 cups milk<br \/>\n1\/2 cup yellow onion, finely diced<br \/>\n1 bay leaf<br \/>\n1\/2 teaspoon paprika<br \/>\n1 large egg<br \/>\n12 ounces sharp cheddar, shredded<br \/>\n1 teaspoon kosher salt<br \/>\nFresh black pepper <\/p>\n<p>Topping:<br \/>\n3 tablespoons butter<br \/>\n1 cup panko bread crumbs <\/p>\n<p>Preheat oven to 350 degrees F.<br \/>\nIn a large pot of boiling, salted water cook the pasta to al dente.<br \/>\nWhile the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it&#8217;s free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.<br \/>\nTemper in the egg. Stir in 3\/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese. <\/p>\n<p>Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes.
