{"id":97,"date":"2017-10-08T15:00:14","date_gmt":"2017-10-08T15:00:14","guid":{"rendered":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/roasted-carrots-parsnips-with-shallot-herb-butter\/"},"modified":"2017-10-08T15:00:14","modified_gmt":"2017-10-08T15:00:14","slug":"roasted-carrots-parsnips-with-shallot-herb-butter","status":"publish","type":"post","link":"http:\/\/sofadog.net\/recipes\/index.php\/2017\/10\/08\/roasted-carrots-parsnips-with-shallot-herb-butter\/","title":{"rendered":"Roasted Carrots &amp; Parsnips with Shallot &amp; Herb Butter"},"content":{"rendered":"<div class=\"image_block\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/sofadog.net\/recipes\/\/media\/users\/robin\/IMG_1904.JPG\" alt=\"\" title=\"roasted carrots and parsnips\" width=\"300\" height=\"225\" \/><\/div>\n<p>I usually make a double or triple batch of the herb butter to keep in the freezer.<\/p>\n<p>1 pound carrots<br \/>\n1 pound parsnips<br \/>\n3 tablespoons extra virgin olive oil<br \/>\n1 1\/2 teaspoons kosher salt<br \/>\n1\/2 teaspoon freshly ground black pepper<br \/>\n1\/4 cup butter<br \/>\n2 tablespoons minced shallot<br \/>\n2 tablespoons finely chopped fresh chives<br \/>\n1 1\/2 teaspoons finely chopped fresh rosemary<br \/>\n1 1\/2 teaspoons chopped fresh thyme<br \/>\n1 clove garlic, minced<\/p>\n<p>Position a rack at the center of the oven and preheat to 450F.<\/p>\n<p>Cut the carrots and parsnips into 2 x 1\/4-inch matchsticks (alternatively, slice in the food processor). Put them into a large bowl and toss with the oil. Sprinkle with the salt and pepper and toss again. Transfer the vegetables to a 10&#215;15-inch pyrex dish (I use a roasting pan instead) and roast, stirring every 15 minutes, until the vegetables are nicely browned, 40-45 minutes.  When they&#8217;re close to done check every five minutes.<\/p>\n<p>Meanwhile, soften the butter in the microwave until it is soft but not runny. Combine it with the shallot, chives, rosemary, thyme, and garlic in a small bowl and mix well. <\/p>\n<p>After removing the carrots and parsnips from the oven, add the herb butter and toss to coat.
